Grilled Margarita Grouper

Ingredients

* 1 1/2 lbs grouper fillets
* 1/3 cup white or gold tequila
* 1/2 cup triple sec
* 3/4 cup fresh lime juice
* 1 tsp salt
* 2-3 large cloves fresh crushed garlic
* 2 tsp vegetable oil
* 3 medium diced tomatoes
* 1 medium finely chopped onion
* 1 Tbsp minced jalapeño or serrano chile
* 2-4 Tbsp chopped fresh cilantro
* 1 pinch sugar

Directions

1. Combine tequila, triple sec, lime juice, garlic, salt, and oil.
2. Place fish in a single layer in a flat dish. Pour tequila mixture over, and marinate for 1/2 hour at room temperature, or 3 hours in the refrigerator.
3. Just before serving, combine tomatoes, onion, chile, cilantro, sugar, and salt to taste to make fresh tomato salsa.
4. Remove fish from marinade (reserve), and pat dry. Brush fish on both sides with oil, and grind pepper over it.
5. Cook on greased grill over high heat until flesh is opaque (about 4 minutes per side). 6. Boil sauce in a saucepan for about two minutes, remove and discard the garlic cloves, and spoon over fish.
7. Serve alongside fresh tomato salsa.

Gold-Coast Grouper with Mojo Marinara

Ingredients

* 2 teaspoons vegetable oil
* 1/2 cup chopped green onions
* 1/4 cup chopped fresh pineapple
* 1/4 cup chopped peeled mango
* 1/4 cup chopped red bell pepper
* 1/4 cup chopped green bell pepper
* 2 teaspoons minced seeded jalapeno pepper
* 2 teaspoons minced fresh thyme
* 1/2 cup tomato puree
* 2 tablespoons fresh lime juice
* 1/2 teaspoon salt
* 1/2 teaspoon black pepper
* 4 (6-ounce) grouper fillets
* Cooking spray

Directions

Preheat oven to 400°.Heat oil in a medium saucepan over medium heat until hot. Add green onions, pineapple, mango, bell peppers, jalapeno, and 1 teaspoon thyme; sauté 2 minutes. Add tomato puree, lime juice, 1/4 teaspoon salt, and black pepper; bring to a boil. Cover, reduce heat, and simmer 5 minutes. Remove from heat; keep warm.Rub fish with 1 teaspoon thyme and 1/4 teaspoon salt. Place fish on a broiler pan coated with cooking spray. Spoon mango mixture evenly over fish. Bake at 400° for 20 minutes or until fish flakes easily when tested with a fork.

Rum-and-Pepper Painted Fish With Habanero-Mango Mojo

Ingredients

* 2-1/2 tablespoons black peppercorns
* 12 whole cloves
* 3/4 cup white rum
* 1/2 cup sugar
* 1/2 cup low-sodium soy sauce
* 2-1/2 tablespoons grated lemon rind
* 2 tablespoons fresh lemon juice
* 1 tablespoon vegetable oil
* 4 (6-ounce) grouper or other firm white fish fillets
* Habanero-Mango Mojo
* Black Bean-and-Fruit Salsa
* Lime wedges (optional)

Directions

1. Heat a nonstick skillet over medium-high heat until hot. Add peppercorns and cloves, and cook 1 minute. Place spice mixture in a spice or coffee grinder; process until finely ground. Place pepper mixture in a saucepan. Add rum and next 4 ingredients (rum through lemon juice); bring to a boil. Reduce heat; simmer, uncovered, 25 minutes or until reduced to 1/2 cup. Strain pepper "paint" through a fine sieve over a bowl; discard solids. Set aside.

2. Preheat oven to 450 degrees.

3. Wrap handle of skillet with foil; heat oil in pan until hot. Brush pepper paint over one side of fish. Place fish, paint side down, in skillet; sauté 3 minutes or until dark brown. Turn fish over; place skillet in oven.

4. Bake 7 minutes or until fish flakes easily when tested with a fork. Serve fillets with Habanero-Mango Mojo and Black Bean-and-Fruit Salsa; garnish fillets with lime wedges, if desired.

Baked Grouper with Two-Pepper Relish

Servings: 6

Ingredients

* 1/3 cup chopped pitted kalamata olives
* 2 tablespoons minced fresh parsley
* 1 tablespoon extra-virgin olive oil
* 2 teaspoons red wine vinegar
* 1 1/2 teaspoons minced fresh or 1/2 teaspoon dried thyme
* 1/4 teaspoon salt
* 1 yellow bell pepper - roasted - peeled and chopped
* 1 red bell pepper - roasted - peeled and chopped
* 1 garlic clove - minced
* 6 (6-ounce) grouper fillets
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* Cooking spray
* 1/3 cup dry white wine
* Thyme sprigs (optional)

Directions

Preheat oven to 375º.

Combine first 9 ingredients in a bowl.

Sprinkle fish with 1/4 teaspoon salt and black pepper. Place fish in a 13 x 9-inch baking dish coated with cooking spray. Add wine to baking dish. Bake at 375º for 24 minutes or until fish flakes easily when tested with a fork. Serve with pepper relish. Garnish with thyme sprigs, if desired.

* 1 tablespoon extra-virgin olive oil
* 2 teaspoons red wine vinegar
* 1 1/2 teaspoons minced fresh or 1/2 teaspoon dried thyme
* 1/4 teaspoon salt
* 1 yellow bell pepper roasted peeled and chopped
* 1 red bell pepper roasted peeled and chopped
* 1 garlic clove minced
* 6 (6-ounce) grouper fillets
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* Cooking spray
* 1/3 cup dry white wine
* Thyme sprigs (optional)

Directions

Preheat oven to 375.

Combine first 9 ingredients in a bowl.

Sprinkle fish with 1/4 teaspoon salt and black pepper. Place fish in a 13 x 9-inch baking dish coated with cooking spray. Add wine to baking dish. Bake at 375º for 24 minutes or until fish flakes easily when tested with a fork. Serve with pepper relish. Garnish with thyme sprigs, if desired.

Blackened Grouper Parmesian

Servings: 2

Ingredients

* 1 1/2 lbs. grouper fillets
* 1 Tablespoon black pepper
* fresh ground
* 1 teaspoon salt
* 1 Tablespoon celantro
* 4 Tablespoons melted butter or olive oil
* 1/2 cup white vinager
* 4 Tablespoons parmesian cheese
* 1/2 cup water
* 1 Tablespoon garlic salt (optional)
* 2 servings of asparagus
* juice of 1 lemon or lime

Directions

Rinse chilled fillets and place in marinade dish. Combine melted butter, vinager, salt, pepper, garlic, and celantro, in bowl. Brush butter mixture over both sides of fillets and pour rest in pan and let marinate for 15 minutes. Grill over medium heat only until heated. Turn fillets over and sprinkle paramesian cheese over entire fillets. Grill only a few minutes more. Do Not Over Cook. Fillets should be easy to flake and moist not dry. Meanwhile, prepare the asparagus as directed in the note above. In a saute pan over medium heat, warm the remaining 1/2 tablespoon (per serving) of butter or oil and brush over the fillets and squeeze on lemon or lime. Serve immediatly

Other Notes

Serve with rice and asparagus.
